Looking for a way to use up some fresh herbs and cheese left over from Christmas I decided to bake this easy soda bread.

I had parsley and thyme in the fridge and chopped up enough to make a handful of mixed herbs and also threw in a handful of grated cheddar and about a tablespoon of mixed seeds for extra flavour. You can use buttermilk or sour milk for this recipe, or you can use a carton of natural yogurt with fresh milk to make up the liquid quantity.
Herby/cheesy/seedy soda bread
450g plain flour
1 teaspoon bread soda
1 teaspoon salt
Handful chopped fresh herbs (I'm using parsley & thyme)
Handful of grated hard cheese (like cheddar)
Tablespoon mixed seeds
350-400ml buttermilk or sour milk
Preheat oven to 200C
Mix flour, bread soda (sieved!), salt, herbs, cheese & seeds in a bowl. Make a well in the centre and add almost all the milk and with a clawed hand mix to bring together. You may need to add the rest of the milk - or not!
When it comes together tip onto a floured baking tray and gently shape into a round about 3cm deep. No need to knead! Cut a deep cross in the bread and sprinkle with a little more grated cheese.
Bake immediately in a hot oven 200C for about an hour or until the base sounds hollow when tapped. Wrap loosely in a clean t-towel to soften the crust a little and cool on a rack.
This bread is delicious simply buttered or served with cheese.
